Dark cacao–pepita freezer bites

A no-bake, cooling treat built to do exactly what the magnesium post teaches — stacking the body's top magnesium foods (pepitas, cacao, almond, hemp, chia, and flax) into one bite, instead of the tired spinach salad.

Cold-pressed coconut oil gives it a truffle-like melt, bright orange zest and warm cardamom lift the dark cacao, and a flaky-salt finish makes it feel like a treat. No cooking heat means maximum nutrient retention.

Dark chocolate pepita freezer bites rolled in hemp hearts and finished with flaky salt

Ingredients

  • 1 cup sprouted (or soaked) organic pepitas — top magnesium + zinc
  • ½ cup organic almond butter (unsweetened)
  • 2 tbsp cold-pressed virgin coconut oil, melted
  • ⅓ cup organic raw cacao powder (fair-trade)
  • ¼ cup organic hemp hearts
  • ¾ cup organic pitted prunes, soaked — whole-food binder
  • 2 tbsp each sprouted organic chia + ground flaxseed
  • 1 tsp fresh orange zest + ¼ tsp ground cardamom
  • 1 tsp Ceylon cinnamon + ½ tsp vanilla extract
  • ¼ tsp mineral-rich sea salt, in the mix
  • Pinch of cayenne (optional)
  • To finish: flaky sea salt + hemp hearts, toasted coconut, or cacao to coat
  • Optional: 2 tbsp raw organic cacao nibs, for crunch

A gentle note

These bites are rich in magnesium, fiber, and (from the prunes) natural sorbitol — so two bites makes a satisfying serving. Enjoying several at once may loosen things up.

Why sprouted?

Soaking or sprouting the pepitas, chia, and flax lowers phytates and frees up more absorbable magnesium — a small step that meaningfully improves what your body keeps.

Instructions

Soak the pitted prunes in warm water for 5–10 minutes, then drain well — this softens them into a smooth paste that binds everything. Gently melt the coconut oil and let it cool slightly.

In a food processor, blend the pepitas, hemp hearts, chia, and flax into a coarse meal.

Add the soaked prunes, almond butter, melted coconut oil, cacao powder, orange zest, cardamom, cinnamon, vanilla, sea salt, and optional cayenne. Pulse until a sticky, moldable dough forms.

If using cacao nibs, fold them in by hand now for a little crunch throughout.

Chill the dough in the refrigerator for 10–15 minutes so the fats firm up and it won't stick to your hands.

Roll into ~16 balls, then roll each in hemp hearts, toasted unsweetened coconut, or cacao powder. Press a few flakes of sea salt onto the top of each.

Freeze 20 minutes. Store in the freezer and enjoy two bites as a cooling snack. (No cooking heat means no free-radical formation and maximum nutrient retention.)
